Well then show me a round canvas in PS =).... if you mean the image, well that isnt the canvas. The canvas is the window you create in.

ermm square means all 4 sides the same length, not that it has corners at 90 degree angles?

I was refering to the dimensions you choose 500x500 is square 800x500 is not

And as for the background being the canvas, can you explain then, why increasing the 'canvas' size increases the dimensions of your document - sorry but I am pretty sure that I am right on this one, I even checked the PS Bible to make sure I wasn't losing my mind and it seemes to concur that your document is also your canvas!

Even when you can do it well using native Photoshop tools it's a humongous PITA if you have to do it more than a couple times.

Recommended: Human Software's "OttoPaths" plugin, or Extensis' Photographics (if you can find a copy for sale...they no longer support it, but I still use it ALL THE TIME, even though I have and also use Illustrator every day).

Strongly recommended: Illustrator, if text-on-a-path is part of your daily routine.

Yes, Illustrator is great for text on paths. Its easy and you can create very complex paths to type onto, and the text can be manipulated beyond recognition, and it will still look nice.
