HELP! Could anyone tell me if it is possible to use the paint bucket to fill a section with a pattern (stripes or dots or whatever), rather than a solid color?

Photoshop 7.0's Paint Bucket Tool Has this feature. I'm not sure when it was introduced but look in the Options Bar (or Options Palette) when you have the tool chosen and see if you can choose any other options besides "foreground color" in your version of Photoshop.
However, If you already have a selection active, why don't you try the Fill... command in the Edit menu. It's had the option of filling with patterns for as long as I can remember.
