How do you turn off virtual memory??

I remember reading how you could do a cntrl + something to see what was running in the back ground, but I can't seem to find it on the search. Also, how do you turn off virtual memory? I have lost some work because I ran out of ram...
oh yeah, no laffing at my newbie questions
