see how this pic has everything black and white but the bike and the rider... i was wondering how this was done.. how can you choose what you want in color and what you want in black and white.. please help!!!

Make a selection using any of dozens of methods, then put an adjustment layer over your selection that desaturates it. Search for photoshop selection tutorials to find out how to select. pen tool would probably be easy for that type of image.

Or just desaturate the complete image and paint some color back in with the history brush.
