Ni hao,

PS color separation can be controlled in a few ways, and in fact you can replace the traditional C, M, Y, K inks using the Image | Mode | Duotones - options in CS. Be careful with this as many printing houses are not literate with photographic printing not using CMYK.

You can get great effects though, and if your working with a corporate client with specific colors. (for example Blue PMS300 and Orange PMS 151) you could print an entire brochure in their colors and have bright blues/oranges for images. Looks good and only a 2 color job, not 4.

Choose a Quadtone from the drop down list. You can then output print or make your file in any Pantone (actual ink) system.

Most times, it is the printer rip software or film separation software for plate making that controls overall separation.

In Photoshop, choose: File | Print with Preview
See if your current printer or plate making system can color separate for you or choose the options supplied in Photoshop. eg; Document | Separations.
Coreldraw also has a very handy separation filter if you only need to print inhouse proofs.
If you intend to go to full offset printing or screen printing and do not have the correct plate making system, go to a film bureau.

Not sure what sort of doc your working on,
hope it helps,
