Prepare for printing

i'd like to ask whats the difference between adding text in photoshop and later in illustrator. is it because the printing company can export in any dpi they want or ? if i send then .psd in dpi they will be printing in is it same ? (not considering maybe better text functions in illustrator-i'm not very familiar with I.)
