could anyone explain the best technique to add a copyright logo and name to photos in photoshop 7?

1 easy text layer, flattened.
If you need more help than that, I suggest you read the fine manual and experiment a little bit with the application.

The best way would be write your copywrite text really huge put in the center of your picture and adjust the layer opacity very low so people cant erase the copywrite text but also it wont affact the picture that much :D
