because if something was cancled what do you say?

"it was tomorrow, but we had to change it to next week"

exactly.

so tomorrow obviously isn't the answer

actually, "was" would be describing "it" as the subject, not "tomorrow".

now, if you were a time traveller that just came back from the future (given that non-linear time travel is a possibility, considering mass displacement and what have you), then you could use "tomorrow" in a past tense by saying:
"Tomorrow was everything that I hoped it would be."
