In Photoshop 6 or later:
1. Create your text layer.
2. Command/Control-Click on the text layer in the layers palette to load a selection of the text. (you'll now see a marquee around the letters)
3. Click the Create new fill or adjustment layer icon at the bottom of the layers palette (it looks like a circle which is half black; half white.) Select Gradient... from the pop-up menu.
4. Now you're faced with a dialog box where you can select exactly the type of gradient you want and immediately preview the results in the image window. Do what you like, then click OK.

In Photoshop 5.5 or earlier, follow steps 1 & 2 above. Then:
3. Create a new layer.
4. Use the gradient tool with the settings you need to fill the selected area with a gradient on that new layer.
5. You don't need the text layer anymore; you can throw it away.
