Tall Man,
Yea, It's a pain to have to click and unclick all those eyeballs in the layers palette when you want to show one layer and hide the rest- especially when you've got a ton of layers. Just hold down your Alt/ Option key and click on the eyeball. Viola! All the others are instantly hidden and you only see the one you clicked. This also works if you want to leave more than one visible. Assuming they're all stacked next to each other, hold down Alt/ Option and click on the uppermost one. Before you let up on the mouse, drag through the eyeball icons of the other layers you want to remain visible. After you let go of your mouse button, only those layers you selected will be shown.
