What IMing programs are there for Mac OS X? Is there any way to use MSN messenger? And is there a consolidation program like Trillian so I can use all of them from one computer?

Yes, and Yes. All of the chat programs are available. iChat is AIM, there is also MSN, ICQ, and Yahoo. And of course IRC. And Fire lets you chat on all of the above at once: http://fire.sourceforge.net/
